After my trip to Jersey Artisan Distillery I started to think about drinks with rum, so I came up with my cocktail for the week…this Busted Banana Barrel!

This drink is a must try if you’re a rum drinker!

Busted Barrel rum is totally delicious on its own, just for sipping on the rocks or neat, however you prefer. But summertime is coming and there are so many drinks with rum that remind me of sitting on the beach or by a pool.

There are of course the standards like a mojito or a mai tai, which are both delicious, but I wanted to make something a little different.

A few months back we made bananas foster for dessert. Everyone loves it, even the kids. (most of the booze burns off when you light the sauce on fire) The rum adds such a great flavor to the bananas and the sauce that you pour all over the vanilla ice cream…the taste can’t be beat. But because the rum does stand out so much in this dessert you have to make sure it’s good rum. The kind you want to sit down and have a big big glass of.

So why not make a bananas foster cocktail?

I came pretty close with this Busted Banana Barrel. It’s rich, creamy, has an intense rum flavor with a little vanilla. You can serve it over ice, or as my wife prefers, you can strain it into a martini glass for a dessert cocktail. I say a nice piece of chocolate cake would go awesome with this drink too – and why not have them both?

Busted Banana

This creamy banana flavored rum cocktail is one of our favorite warm weather drinks!

Ingredients

  • 2 ounces of  dark Rum
  • 2 ounces banana liquor
  • 1 ounce of heavy cream
  • 2 teaspoons brown sugar
  • 1/4 teaspoon vanilla extract

Caramelized banana garnish

  • Slice a banana into thick slices, coat in brown sugar and then brown in a pan with butter. Flip to the other side and place through a skewer or a toothpick.

Instructions

  1. Add all the ingredients to a cocktail shaker filled with ice. Shake well and strain into a martini glass or in a glass over ice.
