But at some point that does wear off. Like one day when I was trying to make lunch I thought to myself, if I have to eat one more salad or one more turkey roll up I’m going to die.
That’s where crazy good recipes like these Cherrywood Smoked BLT Bites come in.
You have to mix things up on any diet to keep it interesting. I know I can’t eat the same exact thing every day without getting seriously sick of it.
And I mean, come on people. How easy are these to make? Just cook up some bacon, slice a few tomatoes and assemble. It doesn’t get much easier. It’s like my twist on a BLT sandwich, sans bread.
I toasted up some panko breadcrumbs just for some crunch on top but otherwise for this recipe – ditch the bread.

No soggy bread to worry about here! Honestly this is such a simple recipe even if you did wait until the last minute and just had all your ingredients ready – you’d be done in a flash.

The key to making recipes like this that only have a few ingredients…the ingredients have to be top notch. Take the bacon here for example. It’s Hatfield Cherrywood Smoked Extra Thick Cut Bacon and man, I have to tell you.
It’s so darn good.
Don’t even think about cooking up a few slices and saving what’s left in the package. Make it all. You’ll be so happy when you go to make that turkey sandwich the next day and you’ve got these thick cut bacon slices all ready to go in the fridge.
I like to use this grill pan for making bacon, it completely eliminates the mess in your kitchen and the grill adds another layer of flavor to this already crazy good bacon.

So once the bacon is cooked up you’re almost there.
Slice up a few tomatoes and scoop out the flesh, then pile on that bacon.
I like to use lettuce like this frisée because it’s really sturdy and won’t wilt as fast as other lettuce does, so if you’re making these Cherrywood Smoked BLT Bites for appetizers you can totally do them up ahead of time and they’ll still be perfect.
Now on top of the lettuce just add a dollop of mayo – as big or a little as you like – I like a lot of mayo but I held back a little here…mine ended up with a lot more may on top as I was eating them. But however much you like is how much you put on.
Finally, just a drizzle of balsamic glaze on top. Glaze is different from regular balsamic vinegar in case you aren’t familiar with it, but you can get it right at the regular grocery store. It’s a lot thicker than balsamic vinegar so it’s perfect for finishing up a simple recipe like this one.
All that’s left is to sprinkle a few toasted breadcrumbs on top and serve. These Cherrywood Smoked BLT Bites are going to be your new favorite recipe, too. But bacon.

- 3 medium tomatoes
- 1 pound Hatfield Cherrywood Smoked Extra Thick Cut Bacon, cooked
- 1 head frisée lettuce
- 1 cup mayonnaise
- 1 cup panko breadcrumbs, toasted
- Balsamic glaze for drizzling
- Cut each tomato in half, then slice wedges making 4 pieces of each half. From each tomato you will have 8 wedges total.
- Scoop out the flesh of each tomato wedge and set aside.
- Break each piece of bacon into 4 pieces, then add two pieces per tomato wedge.
- Top the bacon with a few pieces of the lettuce.
- Add a dollop of mayonnaise to the top of the lettuce.
- Drizzle with balsamic glaze and top with some of the toasted breadcrumbs.
