A Low Carb, High Flavor Appetizer Recipe

These Low Carb BLT Bites are SO packed with flavor, you’ll never miss the bread! Whether you’re following a low carb diet or not, you’re going to love this appetizer recipe.

These BLT Bites go perfectly on a cheese board or set out as tapas plates – or really all on their own. Their hearty and tasty, so a couple of these apps with a glass of wine or a cocktail is just perfect.

But these delicious tomatoes aren’t just for appetizers, we’ll make them for a light lunch or just keep them in the refrigerator for snacking. They are THAT good, you’re going to want them all the time.

What Ingredients Do I Need To Make These Low Carb BLT Bites?

Tomatoes: Those vine ripened smaller tomatoes work really well for these appetizers. You want these BLT Bites to be smaller, like a two bite appetizer. So a larger tomato might make it awkward to eat.

Thick Cut Bacon: Any bacon you like that is slightly thicker cut to really drive home the bacon flavor.

Frisee Lettuce: I love the texture of frisee lettuce, which works perfectly for these apps. Shredded lettuce of most kinds will work fine, just a sturdier lettuce that will hold up.

Mayonnaise: Let’s do these apps right and add full flavor, full fat mayo, just like you would for your favorite BLT sandwich.

Balsamic Glaze: You can buy balsamic glaze right at the grocery store, if you don’t have it though you can reduce regular balsamic vinegar with a touch of honey until it’s thick and syrupy.

Can I Make These Appetizers Ahead Of Time?

Mostly, yes. You can cut the tomatoes, cook up the bacon and break apart the lettuce into bite sized pieces. Assembly should be done close to when you’re ready to serve but you can certainly do this a couple of hours ahead of time, with the exception of the dollop of mayonnaise on top.

You definitely don’t want mayo to be sitting out too long before serving.

Truth be told, this appetizer recipe is so easy to make, there’s  not really much prep work beside cooking the bacon. As with any recipe that only has a few ingredients, you’ll want to make sure all of the ingredients that you’re using are the best quality you can find.

Obviously this recipe is only going to be as good as the tomatoes that you’re using to make them and the bacon that you’re adding to the top. The lettuce and mayonnaise are kind of secondary ingredients to those.

Just to give a nod to a BLT sandwich, we’re adding a few breadcrumbs to the top. If you’re really concerned about cutting down those carbs, you can leave the bread crumbs off but they really aren’t going to add that many carbs to this recipe.

These delicious low carb appetizers taste like your favorite BLT sandwich!

Ingredients

  • 3 medium tomatoes
  • 1 pound extra thick cut bacon, cooked
  • 1 head frisée lettuce
  • 1 cup mayonnaise
  • 1 cup panko breadcrumbs, toasted
  • Balsamic glaze for drizzling

Instructions

  1. Cut each tomato in half, then slice wedges making 4 pieces of each half. From each tomato you will have 8 wedges total.
  2. Scoop out the flesh of each tomato wedge and set aside.
  3. Break each piece of bacon into 4 pieces, then add two pieces per tomato wedge.
  4. Top the bacon with a few pieces of the lettuce.
  5. Add a dollop of mayonnaise to the top of the lettuce.
  6. Drizzle with balsamic glaze and top with some of the toasted breadcrumbs.

Recipe Notes

These appetizers are best served fresh but with the sturdy frisée lettuce and the thick cut bacon they will stand up on an appetizer platter for a couple of hours, so if you need to make these ahead of time you’re good to go!
