Coconut Rum Floater cocktails are fun, rum flavored drinks that will take you to the islands even if it’s the middle of winter!
One of my favorite vacations ever was our trip to St. John. You can read all about it here, and start planning your vacation as soon as you can. Believe me, you’re never going to want to leave that place.
I’m lucky enough to be going with my family and some good friends back to St. John next month – NEXT MONTH – the planning has been in the works for so long I almost can’t believe that it’s right around the corner.
So what do you do in St. John?
Lay around on all the famous beaches, snorkel, eat seafood and drink rum. Not exactly in that order but all of the above for sure.
Every day it’s the same thing, the kids swim and play on the beach. We do the same, enjoy a few cocktails, go out to dinner and get to bed early. That way we have plenty of rest to do the same thing all over again the next day.
This time though I definitely want to go to a couple of the bars in town that play live music and hang. Drink some rum, listen to good music and just enjoy the warm weather. Can’ you tell it’s my favorite place? It’s the perfect vacation.

The best part is that there’s only two ingredients – rum and coconut water, the trick is in the pouring.
The rum will float on top of the coconut water if you pour it very slowly over the back of a spoon and it’ll start to layer on top.
Since there’s only two ingredients in this Coconut Rum Floater, you need to make sure their top quality. If you can get your hands on a bottle of Bones Rum, made in St. Thomas, just over the bay from St. John, definitely use that.

- 6 oz. coconut water, like Azul
- 2 oz. dark rum
- Star Fruit for garnish
- Add the coconut water to a low ball glass.
- Layer the rum on top by slowly pouring over the back of a spoon.
- Garnish with a slice of star fruit.
