Pineapple Rum Bacon

If you’ve haven’t tried marinating your bacon in booze – now is the time – This Pineapple Rum Bacon is the bast candied bacon you’ll ever try!

I really like candied bacon. I’ve made it here on top of cornbread and here in deviled eggs…so today I’m going to talk about all the ways you need to have this bacon in your world. One look at this stuff and you know it’s going to taste awesome. Just by itself, you can down a few slices. No need for anything else.

But it makes anything you add it to taste so much better. For instance, that turkey sandwich your eating for lunch? Throw on some rum soaked bacon.

Or if you have grilled chicken left over from last night’s dinner? Slice it up in a salad for lunch with some of this bacon. Anywhere you’d normally throw on a regular piece of bacon, just swap out this Pineapple Rum Bacon for it instead.

Grab a pound of your favorite bacon and get it soaking in some rum. I used Captain Morgan Pineapple Rum for this recipe to kick up the pineapple flavor a little more.

How To Make Pineapple Rum Bacon

After a 30 minute soak, dry of the bacon as best as you can and lay it out on a wire rack over a baking sheet.

Layer on brown sugar and crushed pineapple, making sure you really squeeze out the crushed pineapple, and then bake for 20 minutes.

The bacon will crisp up after it sits and cools. If you want it to crisp up even more just put it back in the oven for another 5 minutes. I’m a crispy bacon fan, although I know some people are on the fence about this, so make it as crispy as you like.

Eat it straight from the oven or use it to make whatever you’re eating taste better…or even a garnish for a cocktail like a Bloody Mary? Endless possibilities. Delicious bacon.

Pineapple Rum Bacon

Ingredients

  • 1 lb. bacon, I used thick-cut bacon
  • 1 1/2 c. Pineapple Rum
  • 1/2 c. brown sugar
  • 20 oz. can of crushed pineapple, drained and squeezed dry

Instructions

  1. Preheat the oven to 350 degrees.
  2. Marinate the bacon in a shallow dish with the rum for 30 minutes.
  3. Remove the bacon from the rum and dry off with paper towels.
  4. Lay the bacon strips on a wire rack over a baking sheet.
  5. Place an even layer of brown sugar over each strip of bacon and then scatter the crushed pineapple on top.
  6. Bake for 20 minutes until the bacon is crisp.
  7. The bacon will crisp up even more when cooled.

    Made this while vacationing in Hawaii as we usually buy both rum and pineapples while we are here. Our guests brought the makings for spicy Bloody Marys. The rest is delicious history.

        I love Bloody Mary’s so I am making this asap. I’ve done Pig Candy Bacon and just love it. Something new to try:) And BTW, Hawaii is not an option, it’s like nothing else you will see in the U.S. and it’s not that far! We’ve been to many of the islands and they all have something special to offer. The people are so friendly and the food is AMAZING. Put it on your to do list after this horrible year. You two will love it and we alll deserve a special vacay! Right!?

    I would like to use this as a gift. Can it be stored if so how is best and for how long. Of course I know once the gift is opened there won’t be a need for storing.
