Spring and summer for us is always filled with parties. Birthdays – a lot of them – Holidays, or just random get togethers with friends. Warm weather makes everyone want to get outside, have a few beers and light up the grill.

And sometimes…there’s just not a party or a Holiday. It’s just a normal day, but the sun is shining and you can’t bring yourself to just sit inside and watch TV. Right? Doesn’t it make you feel guilty in a weird way to be sitting inside when it’s so nice out?

So that’s when I bring the radio out to the deck, grab a few beers and light up my grill. I like using this table top mini charcoal grill for last minute party on the deck. And if you grab some Kingsford® Instant Light Charcoal – your grill is ready to go in 10 minutes.

Then while the charcoal is heating up I can rummage around in the fridge to see what’s around to cook up. I know everyone thinks about some sort of meat like a steak or burgers or chicken when the grill is going. But it doesn’t have to just be the main course that you cook u on the grill. Today I decided on these Grilled Cheese Garlic Croissants, sort of like a snack that turned into dinner…

These croissants are so easy to make and they’re done in minutes. So you can get together as many of them as you want and cook them up as needed. This is where a random night on the deck turns into a party…the kids get home, the wife gets home and even a neighbor or two smells the garlic on the grill, hears my music and just pops in to see what’s going on.

Sometimes those types of parties are the best, am I right? Last minute parties that don’t need any planning, just food and drinks.

Make sure your charcoal grill is going on a pretty low temperature after you get it lit. You just need a light toasting on the croissants and then enough heat to melt the cheese, but that charred flavor from the charcoal grill is what really makes these Grilled Cheese Garlic Croissants unbelievably good.

After a light toasting, get the croissants off the grill and on to a sheet pan.

Next, brush on melted butter and parsley, then a layer of fontina cheese. Then add as much or as little (a lot for me) sliced garlic on as you like then get them back on the grill with the lid on to melt the cheese.

That’s it. Snacks are done. You can even just set out all the ingredients and let your family and friends make their own Grilled Cheese Garlic Croissants…that way you can sit back and have another beer and enjoy the company.

The moral of the story here is to always have stocked fridge full of beer and plenty of food in case one of these days comes around, because you don’t want to miss out on the fun! I always grab a couple of bags of Kingsford® Instant Light Charcoal when I’m out shopping at Walmart and whatever party food I can think of…just to be prepared.

Grilled Cheese Garlic Croissants

This tasty twist on garlic bread can be served for appetizers or as a side to dinner!

Ingredients

  • 4 large croissants, split in half
  • 3 tablespoons chopped parsley
  • 4 tablespoons butter, melted
  • 1/4 cup thin sliced garlic
  • 8 oz. fontina or mozzarella cheese, sliced thin
  • Fresh rosemary for garnish

Instructions

  1. Preheat a grill on low heat, about 300 degrees. Alternately, you can toast the croissants in a toaster oven or a regular oven until lightly browned and then proceed with the recipe.
  2. Place the croissants on the grill split side down for 30 seconds to a minute just to get a light toast on them. Remove from the grill and place on a cutting board or sheet pan.
  3. Mix the parsley with the butter and brush onto the toasted side of each croissant.
  4. Top the croissants with cheese and then the thinly sliced garlic. Place the croissants back onto the grill for just a minute to melt the cheese, or back into the oven.
  5. Garnish with rosemary leaves and serve.
