Chicken Souvlaki is a fun and easy dinner for everyday meals or parties. Grilled, marinated chicken served on warm pita bread with creamy tzatziki sauce!

Ingredients
- 1 1/2 pounds boneless, skinless chicken breasts or thighs
- Greek Chicken Marinade
For Serving:
- 6 Pita Breads
- 2 large tomatoes, sliced
- 1 red onions, sliced
- 3 cups shredded Romaine or Iceberg Lettuce
- Tzatziki Sauce
Instructions
- Start by cutting the chicken into large cubes. Add to a dish or a resealable bag and toss with the Greek Chicken Marinade. Marinate the chicken for 4-6 hours.
- If using wooden skewers, soak them in water for at least 30 minutes before grilling. After the chicken has marinated, remove the chicken from the marinade and thread onto the skewers. Grill over medium heat for 4-5 minutes on each side until the chicken is cooked through. If you don’t have a grill available, you can cook the chicken in a skillet or in the oven. (see note)
- While the chicken is cooking, wrap the pita bread in aluminum foil and place it in the oven at 325 degrees or you can add the foil packet right onto the grill during the last few minutes of cooking.
- To assemble, place a bed of shredded lettuce on a warm pita bread and top with a spoonful or two of tzatziki sauce. Add a few pieces of the chicken along with sliced tomatoes and sliced red onion.
Recipe Notes
To use the oven or a skillet: Ski the skewers and just add the chicken right to a skillet with some olive oil and cook until no pink remains. If using the oven, spray a baking dish with non-stick cooking spray and bake at 350 for 10 minutes until no pink remains.
