These Cheeseburger Quesadillas are filled with seasoned ground beef, bacon and cheddar cheese. All the flavors you love in a classic cheeseburger – quesadilla style! Serve these delicious quesadillas for appetizers or a fun dinner.
Ingredients
- Avocado oil or olive oil for cooking
- 1 pound ground beef
- 1 tablespoon Worcestershire sauce
- 2 tablespoons ketchup
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 8 strips bacon, cooked until crisp and chopped
- 8 medium sized flour tortillas (taco size)
- 3 cups shredded cheddar cheese
Instructions
- Add a tablespoon of oil to a large skillet over medium heat. Add the ground beef and cook while breaking into crumbles. Cook until no pink remains and then drain the grease from the pan.
- Add the Worcestershire sauce, ketchup, garlic powder, onion powder and salt then stir to combine. Remove the beef filling from the pan to a bowl. Let the skillet cool for a few minutes, then carefully wipe out the skillet with a paper towel.
- Turn the skillet back on over medium-low heat, then spray the skillet with cooking spray or add another drizzle of olive oil. You don’t want too much oil in the pan, just a very thin layer so the tortilla doesn’t stick. Place one flour tortilla into the skillet then add a layer cheese, a layer of ground beef followed by some of the bacon, then topped with more cheese. Place another tortilla on top and press down with a spatula or a plate. (SEE NOTE 1)
- Cook for a minute or two, then check the bottom of the quesadilla with a spatula to see if it’s brown. Once browned, flip the quesadilla over, press down with a plate again and cook for another minute or two on the second side until brown and crispy.
- Slide the quesadilla out onto a cutting board and tent with foil to keep warm. (SEE NOTE 2)
- Repeat the process to make 3 more quesadillas. Cut into wedges and serve with Big Mac Sauce for dipping!
Recipe Notes
Note 1: You’ll be dividing the ground beef filling, the shredded cheese and the bacon between 4 quesadillas. You can do this visually or split them into 4 piles before you start cooking to make it easier.
Note 2: If you have a griddle you can cook at least 2 quesadillas at once (a Blackstone would work great for cooking all at once!) But if you’re cooking one quesadilla at a time, keep them on a board in a single layer and tent with foil, don’t wrap in foil or the steam will make the tortillas soft. Alternately, you can keep the quesadillas warm on a sheet pan in a 3o0 degree oven.
