Easy Dan Dan Noodles

These easy Dan Dan Noodles are nutty, crunchy and so addicting! A take out favorite that you can easily make right in your own kitchen!

Ingredients

  • 12 ounces spaghetti (or white noodles)
  • 1/2 pound ground beef
  • 1 tablespoon canola, vegetable or peanut oil
  • 1/2 cup Peanut Sauce
  • 4 scallions, chopped (reserve 2 tablespoons for garnish)
  • 1/2 cup shredded carrots
  • 1/4 cup chopped peanuts
  • 1 – 2 teaspoon hot chili sauce with garlic
  • 1 teaspoon crushed red pepper flakes for garnish

Instructions

  1. Cook the spaghetti according to the package directions, drain and rinse with cold water.
  2. While the pasta is cooking, add the oil to a wok or a large skillet over medium-high heat. Add the ground beef to brown, breaking up into small pieces. Drain any drippings from the wok.
  3. Add the cooked spaghetti and the peanut sauce to the wok along with the scallions and carrots. Toss together with tongs until combined over low heat.
  4. Serve the noodles topped with the chopped peanuts, a drizzle of the chili sauce and the reserved scallions. Garnish with crushed red pepper flakes if desired.

Recipe Notes

You can also leave the ground beef out and make this a vegetarian dish.

Store: Store leftovers in an air tight container in the refrigerator for up to 3 days.

Reheat: Reheat leftovers in the microwave with a tablespoon of water or chicken broth to thin out the sauce. We also like to make a double batch of the peanut sauce to reserve for heating up the noodles.
