These easy Dan Dan Noodles are nutty, crunchy and so addicting! A take out favorite that you can easily make right in your own kitchen!
Ingredients
- 12 ounces spaghetti (or white noodles)
- 1/2 pound ground beef
- 1 tablespoon canola, vegetable or peanut oil
- 1/2 cup Peanut Sauce
- 4 scallions, chopped (reserve 2 tablespoons for garnish)
- 1/2 cup shredded carrots
- 1/4 cup chopped peanuts
- 1 – 2 teaspoon hot chili sauce with garlic
- 1 teaspoon crushed red pepper flakes for garnish
Instructions
- Cook the spaghetti according to the package directions, drain and rinse with cold water.
- While the pasta is cooking, add the oil to a wok or a large skillet over medium-high heat. Add the ground beef to brown, breaking up into small pieces. Drain any drippings from the wok.
- Add the cooked spaghetti and the peanut sauce to the wok along with the scallions and carrots. Toss together with tongs until combined over low heat.
- Serve the noodles topped with the chopped peanuts, a drizzle of the chili sauce and the reserved scallions. Garnish with crushed red pepper flakes if desired.
Recipe Notes
You can also leave the ground beef out and make this a vegetarian dish.
Store: Store leftovers in an air tight container in the refrigerator for up to 3 days.
Reheat: Reheat leftovers in the microwave with a tablespoon of water or chicken broth to thin out the sauce. We also like to make a double batch of the peanut sauce to reserve for heating up the noodles.
