This Slow Cooker Jersey Pot Roast is my twist on pot roast, Jersey style!

Italian Pot Roast

This Italian Pot Roast is so tender you can cut it with a fork! Slow cooked in a tomato sauce with peppers, this pot roast has all my favorite Italian flavors!

Ingredients

  • 1 can (29 oz.) tomato sauce
  • 1 (.7 oz package) dry Italian dressing mix
  • 1 (.87 package) Brown Gravy mix
  • Kosher salt
  • Fresh black pepper
  • 45 lb. Bottom Round Roast
  • Olive oil
  • 1 large red pepper, sliced into strips
  • 1 large green pepper, sliced into strips
  • 1 large yellow onion, sliced

Instructions

  1. Mix the tomato sauce with the brown gravy and Italian dressing mix. Pour half the tomato sauce into a slow cooker.
  2. Season the chuck roast generously on all sides with salt, pepper and garlic powder. Add the oil to a dutch oven or large cast iron skillet and sear the roast on all sides until nicely browned, then add it to the slow cooker.
  3. Pour the rest of the tomato sauce on top of the roast and then add the peppers and onions.
  4. Set the slow cooker on low and cook for 8 hours.
  5. Remove from the slow cooker, slice and spoon the sauce and peppers over the top.
