Shredded Chicken and Artichoke Sliders

This slow cooker shredded chicken is tender and juicy!



For the Shredded Chicken

  • 2 lb. boneless, skinless chicken breasts
  • 3 cups chicken broth
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons onion powder
  • 1 1/2 teaspoons kosher salt
  • Slider Buns

Marinated Artichoke Salad

  • 2 cups marinated artichokes, chopped
  • 2 cups roasted red peppers, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons extra virgin olive oil
  • 1/2 cup packed arugula leaves, chopped


  1. Add the chicken breasts to a slow cooker along with the chicken broth, garlic powder, onion powder and salt. Set to high for 4 hours
  2. When the chicken is done, remove to a large bowl and shred into large pieces with two forks
  3. Add the chopped artichokes, chopped red peppers, salt, pepper, olive oil and chopped arugula to a large bowl and stir, if possible chill for an hour in the refrigerator
  4. Assemble the sliders with some of the shredded chicken on the bottom of a slider bun and then a scoop of artichoke salad on top
  5. Optional toppings can include mayonnaise, red pepper flakes, fresh basil and fresh mozzarella cheese
