Scale

Ingredients

  • 2 tablespoons olive oil or canola oil, divided
  • 4 eggs, beaten
  • 1 pound ground beef
  • 1 cup diced green peppers
  • 1 cup diced red peppers
  • 1 cup diced onion
  • 1 tablespoon chopped garlic
  • 4 cups cooked, cooled rice
  • 1 tablespoon Worcestershire sauce
  • 1/4 cup soy sauce
  • 1 tablespoon toasted sesame oil
  • 1 teaspoon kosher salt
  • Black pepper to taste
  • 1 1/2 cup shredded provolone or mozzarella cheese
  • 1/4 cup chopped scallions, for garnish (optional)

Instructions

  1. Spray a large, deep skillet with cooking spray, then set over medium heat. Add one tablespoon of the oil and then pour in the eggs. Scramble the eggs until just cooked through and then remove to a plate.
  2. Add the remaining tablespoon of the oil to the skillet and cook the ground beef, breaking up into crumbles until no pink remains. Drain any grease from the skillet.
  3. Add onions and peppers, stirring into the ground beef. Cook for 5 minutes until they have softened, then add the garlic and cook for a minute more.
  4. Add the rice and the scrambled eggs, stirring to combine. Add the Worcestershire sauce, soy sauce, sesame oil, salt and pepper to taste.
  5. Sprinkle in the shredded cheese and stir into the rice until melted. Garnish with chopped scallions (optional) and serve.
