No Bake Blueberry Cheesecake Dip

This super easy no bake dessert recipe is going to make party planning a breeze!

Ingredients

  • 4 cups fresh blueberries
  • 1/4 cup sugar
  • 2 tablespoons water
  • 2 (8 ounce packages) cream cheese, at room temperature
  • 1 1/2 cups confectioners sugar
  • 1 tablespoon vanilla extract
  • 1 cup heavy cream

Instructions

  1. Add the blueberries, 2 tablespoons of water and the 1/4 cup of regular sugar to a small pot over medium heat.
  2. Stir until the sugar is dissolved while bringing to a boil, then turn the heat down to low and simmer for 15 minutes. Remove the pot from the heat to cool.
  3. In a small bowl, beat the heavy cream until stiff peaks form and set aside.
  4. Add the cream cheese, confectioners sugar and vanilla to a larger bowl and beat together with a mixer to combine until smooth.
  5. Gently fold the beaten whipped cream into the cream cheese mixture and then spoon into an 8″ x 8″ dish.
  6. Pour the cooled blueberry mixture on top of the cream cheese, cover and refrigerate for at least an hour.
  7. Serve with cookies and graham crackers for dipping.
