Garlic Parmesan Potatoes

These Garlic Parmesan Potatoes are so addicting! A perfect side for steak or chicken, so good they taste like they came from your favorite steak house!

Ingredients

  • 2 1/2 pounds russet potatoes, diced into 1 inch cubes
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon garlic powder
  • Freshly ground black pepper to taste
  • Garlic Parmesan Sauce

Instructions

  1. Preheat the oven to 425. Spray a large baking sheet with cooking spray and then place the diced potatoes on the baking sheet in a single layer. Add the olive oil to the potatoes and then season the potatoes generously with salt, pepper and garlic powder. Toss the potatoes and then roast for 35 minutes, tossing halfway between cooking. (see note)
  2. While the potatoes are roasting, make the sauce by adding all the ingredients to a bowl. Whisk together to combine and set aside.
  3. Remove the potatoes from the oven and place into a bowl. While still hot, pourĀ 1/4 cup of the sauce over the potatoes. Toss to coat and return to the oven for 7-8 minutes. Alternately, you can add the crispy potatoes to a large bowl and toss with 1/4 cup of the sauce and serve for a more “saucy” version.

Recipe Notes

We’re looking for super crispy potatoes, so if after 35 minutes your potatoes aren’t crispy enough, return them to the oven for another 5 minutes.

You can use leftover sauce to spread on sandwiches, as a dip for chips, veggies or chicken wings.
