Cowboy Caviar Grilled Chicken

This simple chicken dinner is on our menu all year long! You can use this flavorful topping and marinade with baked chicken too!



  • 3 pounds boneless, skinless chicken breast
  • 1 tablespoon taco seasoning
  • 2 teaspoons garlic powder
  • 2 teaspoons cumin
  • 1/2 teaspoon salt
  • 1 lime, juiced
  • 2 tablespoons olive oil
  • 2 cups Boozy Cowboy Caviar


  1. Mix the seasonings together for the chicken and coat well on both sides.
  2. Pour the lime juice and olive oil over the chicken and toss to coat.
  3. Marinate in the refrigerator 4 to 6 hours.
  4. Grill the chicken over medium high heat for 10-12 minutes, turning halfway through cooking until no longer pink inside.
  5. Remove the chicken from the grill and let rest for 5 minutes under foil.
  6. Slice the chicken and place on a serving platter.
  7. Serve the chicken with Cowboy Caviar on top or on the side.
