For the cookies:
- 1 cup butter (room temperature)
- 3/4 cup sugar
- 1 large egg
- 2 teaspoons vanilla extract
- 2 cups flour
- 1 teaspoon cinnamon
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
For the icing:
- 1 cup powdered sugar
- 1/2 teaspoon cinnamon
- 2 tablespoons milk
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350 degrees.
- Add the butter and sugar to a large bowl and beat until light and fluffy. Add the egg and vanilla extract and beat until combined.
- Add the flour, cinnamon, baking powder and salt to another bowl and whisk together to combine.
- Add the flour mixture in batches to the butter mixture, beating to combine after each addition until a dough forms.
- Roll the dough into balls a little smaller than a golf ball (about 2 tablespoons) and place onto a baking sheet lined with parchment paper. Flatten the cookies slightly with two fingers, or you can use the bottom on a glass. Bake at 350 degrees for 8 minutes, remove from the oven and transfer to a rack and let cool.
- Add the powdered sugar, vanilla extract, cinnamon and milk to a bowl. Whisk until combined. Ice the cookies (once they are cooled) and dust with more cinnamon if desired.
Recipe Notes
Store: Once the icing has set, store the cookies in an air tight container for up to 5 days.
