These Chicken Fajita Meatballs are perfect for appetizers or the main meal! A healthy, low fat, high protein recipe that the whole family will love!

- 1 tablespoon olive oil
- 1 cup diced onion
- 1 1/4 cup diced bell peppers
- 1 tablespoon chopped garlic
- 2 pounds ground chicken
- 1 teaspoon kosher salt
- 1 teaspoon cumin
- 1/2 teaspoon garlic powder
- 1/2 cup bread crumbs
- 1 egg, beaten
- 1/4 cup sour cream
- 1/2 cup salsa
Instructions
- Preheat the oven to 400 degrees.
- Add the oil to a skillet over medium heat. Add the onions and peppers to the skillet and cook for 7-8 minutes until softened. Add the garlic and cook and minute longer. Remove the skillet form the heat and let the vegetables cool.
- Add the ground chicken, salt, cumin, garlic powder, bread crumbs, egg, sour cream and salsa to a bowl. Mix together to combine the ingredients and then stir in the cooled peppers and onions.
- Use a #20, 2 ounce scooper (like the size of a golf ball) to portion out the meatballs. Spray your hands with cooking spray to help keep the mixture from sticking to your hands. Place the meatballs on a baking sheet that’s been sprayed with cooking spray and bake for 12-15 minutes.
- Serve the meatballs as appetizers with your dipping sauce of choice, or with rice on the side for dinner.
