This hearty Arugula Salad with Creamy Maple Dressing gives us all the fall vibes! Sweet beets combined with peppery arugula and walnuts are a perfect match with creamy feta cheese and a homemade maple dressing!

Ingredients

For The Creamy Maple Dressing:

  • 1/4 cup mayonnaise
  • 2 tablespoons plain greek yogurt
  • 1/4 cup olive oil
  • 1/4 cup maple syrup
  • 1 tablespoon stone ground mustard
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon kosher salt
  • Fresh black pepper to taste

For The Arugula Salad:

  • 5 ounces arugula
  • 4 ounces feta cheese, crumbled
  • 8 ounce package cooked beets, drained and chopped
  • 1 cup roughly chopped walnuts
  • 1 cup sliced grape tomatoes

Instructions

  1. Add the ingredients for the salad dressing to a small blender and blend until the dressing is creamy and emulsified.
  2. To a bowl, add the arugula, feta cheese, beets, walnuts and tomatoes. Pour on the desired amount of Creamy Maple Dressing and toss until the salad ingredients are all coated in the dressing. Serve immediately.

Recipe Notes

The salad dressing will keep in a covered container, salad cruet or mason jar for 4 to 5 days. Shake or blend again before using to emulsify the dressing if it separates.
