Cook diced onion for 5 minutes, then combine with salt, pepper, diced potatoes, sour cream, condensed cream of chicken soup, grated cheddar cheese and melted butter in a large bowl.
Butter a 9″ x 13″ casserole dish and then spoon the potato mixture into the dish, evening out with a spatula. Then add shredded cheddar cheese to the top and bake.
