Cook the onions over medium-low heat so that they don’t burn.
Add chopped garlic and tomato paste after the onions have caramelized and stir to combine.
Mix together ground beef, ground pork, eggs, parmesan cheese, breadcrumbs and seasonings.
Form the mixture into a loaf and place onto a baking sheet lined with non-stick aluminum foil.
Bake the meatloaf, then remove from the oven and top with marinara sauce and mozzarella cheese.
Return the meatloaf to the oven and continue baking until the cheese is melted on top.
Let the meatloaf rest for a few minutes, then slice and serve.
