Start with the right potato! Starchy Russet potatoes will give you that crispy crust that you’re looking for in an oven fry. Cooking the fries in a single layer will allow them to brown and crisp evenly.
Wash and scrub the potatoes, and leave the skins on. Cut each potato into about 8 pieces. Don't cut the wedges too large!
Toss the potato wedges in a bowl with oil and spices. Spread into a single layer on a baking sheet. Use two sheets if needed to prevent crowding.
Add extra seasoning on top, then bake for 20 minutes. Remove from the oven, flip the fries, and bake for 10-15 minutes more, until crispy.
Taste and add additional seasonings if needed. Serve alongside your favorite steak, or as a fun appetizer with dipping sauces.
