This Watermelon Vodka Granita is a refreshing summer time recipe with a boozy kick! Serve this granita recipe instead of heavy desserts!
8 cups diced watermelon, seeds removed
1/4 cup chopped fresh mint, plus extra mint leaves for garnish
1 lime, juiced
3/4 cup watermelon or plain vodka
Add the watermelon to a blender and puree until smooth.
Pour into a mixing bowl and add the lime juice and vodka then stir to combine.
Pour into a 9″ x 13″ glass dish and freeze overnight or up to 8 hours.
When ready to serve scrape the granita with a fork to make shavings.
Scoop the shavings into a serving glass, garnish withe mint and serve immediately.
