This easy Swedish Meatloaf recipe is perfect winter comfort food. It’s bursting with flavor and sure to become a family dinner favorite!

For the Meatloaf
- 1 tablespoon olive oil
- 1 cup diced onion
- 3 cloves of garlic, minced
- 2 pounds meatloaf mix
- 1 cup bread crumbs
- 2 eggs
- 2 teaspoon salt
- 1/4 teaspoon freshly ground nutmeg
- 1/4 teaspoon allspice
- 1/4 cup chicken broth
- Fresh black pepper to taste
- 1 tablespoon Worcestershire sauce
- 1 tablespoon sweet chili sauce
For the Glaze
- 1/2 cup sweet chili sauce
- 1 cup grape jelly
- Pinch of cayenne pepper
- 1 tablespoon ketchup
- Salt and pepper to taste
Instructions
- Preheat oven to 400 degrees.
- In a medium skillet on medium-high heat, cook the onion in olive oil for 5 minutes. Add in the minced garlic and cook a minute more. Let cool slightly off the heat.
- In a large bowl combine the meat, the cooled onion and garlic mixture, bread crumbs, chicken broth, eggs, nutmeg, chicken broth, Worcestershire sauce, sweet chili sauce and salt and pepper to taste. Mix well to combine.
- Make the glaze by combining all the glaze ingredients in a saucepan. Bring to a simmer and cook for 5 minutes to thicken.
- Form the meat mixture into a loaf on a baking sheet lined with aluminum foil. Top the meatloaf with 1 cup of the glaze and place in the oven for 45 minutes. Baste the meatloaf with more glaze and cook another 15 minutes, until no longer pink in the center.
- Let cool for 10 minutes then slice and serve with extra sauce on the side.
