- 2 large salmon filets or 4 smaller salmon filets (approximately 2 pounds total)
- Fresh kosher salt and freshly ground black pepper
- 3/4 cup chopped pistachios
- 1 tablespoon honey
- 1 tablespoon stone ground mustard
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped fresh garlic
- 1 teaspoon fresh lemon juice
Instructions
- Preheat the oven to 400 degrees. Line a baking sheet with parchment paper and set aside.
- Dry off the salmon filets with paper towels and then season generously with salt and pepper.
- Add the chopped pistachios, honey, mustard, parsley, garlic and lemon juice to a bowl and mix to combine.
- Spread the mixture onto the salmon filets, pressing down to ensure that the filling will stick to the fish.
- Bake for 15 minutes, depending on the thickness of your salmon. The salmon is done when it flakes easily with a fork. If the pistachio topping starts getting too brown, cover loosely with aluminum foil and continue cooking until the fish is done.
