- 1 tablespoon olive oil
- 1 1/2 cups diced celery
- 1/2 cup diced red onion
- 1 1/2 cups frozen peas and carrots
- 1/4 cup chicken broth
- 2 tablespoons crushed garlic
- 5 cups riced cauliflower
- 2 cups diced ham
- 1/2 cup heavy cream
- 1/4 cup chicken broth
- 3/4 cup tomato sauce
- 1 1/2 teaspoons salt
- 1 teaspoon black pepper
- 1/2 cup grated parmesan cheese, plus extra for topping
Instructions
- In a large skillet, heat the oil over medium heat.
- Add the celery and onion and cook, stirring, for 8-10 minutes until softened.
- Add the ham, peas, carrots, the chicken broth and crushed garlic. Stir to combine and cook for 5 minutes, uncovered.
- Next add the riced cauliflower to the skillet, stir and cover for another 5 minutes to soften the cauliflower rice.
- Now pour in the tomato sauce and cream, stir and season with salt and pepper.
- Add the parmesan cheese, stir and serve with extra parmesan cheese for topping.
