French Lentil Soup

This delicious and cozy French Lentil Soup is ready to serve in just 30 minutes. Enjoy this veggie-packed soup and night of the week for a healthy, protein packed meal!

Ingredients

  • 2 tablespoons olive oil
  • 3/4 cup diced onion
  • 3/4 cup diced celery
  • 3/4 cup diced carrots
  • 1 tablespoon tomato paste
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon garlic, minced or grated
  • 1 teaspoon kosher salt
  • 3/4 teaspoon fresh ground black pepper
  • 17.6 ounce package steamed French lentils (can also substitute canned or dried lentils)
  • 4 1/2 cups chicken stock or vegetable broth
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Add the oil to a large dutch oven or soup pot over medium heat. Add the onion, celery and carrots and cook while stirring for 5 minutes.
  2. Add the tomato paste and stir into the vegetables. Now add the thyme, garlic, salt and pepper and stir.
  3. Carefully break up the lentils from the package and add them to the pot. If using canned lentils, drain and rinse, then add to the pot. Pour in the chicken or vegetables broth, stir and bring to a simmer.
  4. Partially cover the pot and continue to simmer the soup for 20 minutes.
  5. Taste for seasonings and adjust if needed, then stir in the fresh parsley and serve.

Recipe Notes

IF USING DRIED LENTILS: Cook the lentils according to the package directions and drain. Add to the soup where the lentils are added in the recipe card above.

Store: Let the soup cool down and then store in a container in the refrigerator for up to 5 days.

Freeze: Freeze this soup in freezer bags or containers for up to 6 months.
