Ingredients
- 4 large eggs
- 1/4 cup low-fat or full-fat cottage cheese
- Kosher salt and fresh ground black pepper to taste
- 2 tablespoons butter
- Chives for garnish, optional
Instructions
- Crack the eggs into a bowl. Add the cottage cheese and salt and pepper to taste. Whisk together until blended well.
- Add the butter to a medium skillet over medium-low heat. Once the butter has melted, pour in the eggs and start gently stirring with a spatula. Continue to stir the eggs until large curds form. When most of the liquid is gone from the eggs, remove from the heat.
- Place the eggs on a plate and garnish with fresh chives if using.

Nutrition information is with using 2 tablespoons of butter. The amount of fat will be reduced in half if using a non-fat cooking spray.
