Cottage Cheese Scrambled Eggs are a delicious way to get more protein into your day! This easy breakfast recipe is sure to become a favorite, even for those that don’t like cottage cheese!

Ingredients

  • 4 large eggs
  • 1/4 cup low-fat or full-fat cottage cheese
  • Kosher salt and fresh ground black pepper to taste
  • 2 tablespoons butter
  • Chives for garnish, optional

Instructions

  1. Crack the eggs into a bowl. Add the cottage cheese and salt and pepper to taste. Whisk together until blended well.
  2. Add the butter to a medium skillet over medium-low heat. Once the butter has melted, pour in the eggs and start gently stirring with a spatula. Continue to stir the eggs until large curds form. When most of the liquid is gone from the eggs, remove from the heat.
  3. Place the eggs on a plate and garnish with fresh chives if using.

Recipe Notes

Nutrition information is with using 2 tablespoons of butter. The amount of fat will be reduced in half if using a non-fat cooking spray.
