This Sausage Chili Recipe is packed with flavor! We like a combo of sweet and spicy sausage, lots of beans and bold spices. An easy, and hearty meal that everyone loves.

Ingredients

Scale
  • 1 tablespoon olive oil
  • 2 pounds sweet or spicy chicken sausage (or a combination of both, removed from casings, can also use Italian sausage)
  • 1 1/2 cups diced onion
  • 1 tablespoon minced garlic
  • 1 tablespoon chili powder
  • 1 tablespoon cumin
  • 1 1/2 teaspoons garlic powder
  • 1 1/2 teaspoons salt
  • 1 (15 ounce) can white beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (28 ounce) can diced tomatoes, drained
  • 1 (28 ounce) can tomato sauce
  • 2 teaspoons hot sauce

Instructions

  1. Start by adding the oil to a skillet over medium heat.
  2. Add the chicken sausage (removed from casings) and break up into crumbles while cooking. Once the sausage is broken into crumbles, add the diced onion and garlic. Cook for 5 minutes and then drain and drippings from the pan. Season the chicken with chili powder, cumin, garlic powder and salt, stirring to combine. Transfer the sausage to a 7-8 quart slow cooker.
  3. Add the beans to the slow cooker along with the diced tomato, tomato sauce and hot sauce, stirring to combine.
  4. Cover and set the slow cooker on low for 7-8 hours or on high for 3-4 hours. Alternately, you can cook this chili in a pot on the stove top, see note.

Recipe Notes

Stove Top Directions: Follow the same directions for cooking the sausage, onions and garlic except do it in a dutch oven or soup pot. Drain any drippings after cooking and then add the rest of the chili ingredients. Simmer, partially covered, for 45 minutes to an hour while stirring.

Store: Store chili in an air tight container in the refrigerator for up to 4 days.

Reheat: Reheat the chili on the stove or in the microwave until warmed through.
