This Cheesy Broccoli Orzo is the ultimate comfort food side dish! Perfect alongside chicken or steak, or on its own for an easy, cozy dinner.
Ingredients
- 2 tablespoons butter
- 3 cups finely chopped broccoli florets (see note for using frozen broccoli)
- 1/2 cup diced onion
- 1 cup uncooked orzo
- 2 cups chicken broth
- 1/2 cup heavy cream
- 1/2 teaspoon kosher salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon paprika
- Black pepper to taste
- 1 cup shredded cheddar cheese
Instructions
- Melt the butter in a large deep skillet (or a dutch oven) over medium heat. Add the broccoli and onion, stirring into the butter and cook for 5 minutes, covered. Uncover the pot, stir and let cook for another 3-4 minutes until the broccoli is tender.
- Add the orzo and stir to combine. Cook for 1-2 minutes to lightly toast the orzo. Pour in the chicken broth and cream and season with the salt, garlic powder, paprika and black pepper. Bring to a simmer and cook for 10 minutes, stirring occasionally.
- Once the orzo is tender, stir in the cheese until melted. Taste for seasonings, adjust if needed and serve.
Recipe Notes
If using frozen broccoli, defrost it first and then add it to the onions after they are done cooking, just to warm it through. Make sure to chop the broccoli into small pieces like we’ve done here.
Store: Store leftovers in an air tight container in the refrigerator for up to 5 days.
Reheating: Reheat the orzo in the microwave until just warmed through. Don’t overcook it because the sauce may break. If that does happen, simply stir it back together or add a splash of cream or chicken broth.
