BBQ Ribs Sandwiches are a delicious make ahead dinner recipe that the whole family will love! These sandwiches are also great for game days and parties!

Ingredients

  • Easy BBQ Ribs (Make up until the point of grilling)
  • 2 cups (plus extra for serving) of your favorite BBQ Sauce
  • 8 sub rolls
  • Sliced Pickles

Instructions

  1. Make the Easy BBQ Ribs up until the point where they come out of the oven as we aren’t grilling the ribs for this recipe. Let the ribs cool slightly until you can handle the meat. It will be easier to remove the bones and shred the meat when they’re still warm, so don’t let the ribs cool completely. (See note*)
  2. Preheat the oven to 400 degrees.
  3. Remove the bones, shred the meat and place in an oven proof dish. Add the barbecue sauce and stir to coat the meat. Cover and bake in the oven for 20 minutes, just until the meat is warmed through.
  4. Add the meat to sub rolls with sliced pickles and serve.

Recipe Notes

  • To make the rib meat ahead of time, cook the ribs and let cool slightly. Remove the bones, shred the meat and place in a baking dish. Cover and refrigerate for up to 2 days and then toss with sauce and warm in the oven.
  • Alternatively, you can take the shredded rib meat and freeze for up to 3 months. Let the meat defrost, place in a baking dish with BBQ sauce and then warm in the oven.
  • (1) 3 pound rack of ribs will make 4 generous sandwiches, (2) 3 pounds racks will make 8 generous sandwiches so you can half the recipe or make more and have leftovers or freeze the rib meat for another night!
