Ragu is an Italian meat-based sauce served over pasta. This short rib ragu is an easy variation that's filled with tender beef, fresh herbs, and tomatoes.
Season the short ribs with salt and pepper, then sear the meat on all sides.
Next, sauté diced veggies in a bit of leftover fat, then add the herbs.
Add wine, and gently scrape the bottom of the pot to release the stuck on bits.
Stir in crushed tomatoes, beef broth, then return the short ribs to the pot.
Simmer the sauce for 3 hours. Afterward, shred the short ribs and return the beef to the pot.
Cook the pasta, then add it to the sauce. Toss and then simmer for 5 minutes.
