These Pumpkin Chocolate Chip Muffins are so moist and flavorful from real pumpkin puree! We like ours loaded with chocolate chips – semi-sweet, dark, or milk chocolate will do.
Whisk the pumpkin, brown sugar, oil, eggs and vanilla together until smooth.
Fold in the pumpkin pie spice, baking soda, salt and flour. Once incorporated, add the chocolate chips.
Divide the batter between 12 lined muffin cups, and sprinkle a few extra chips on top. Bake for 18 minutes.
Let them cool for 5 minutes, and dig in! These muffins are delicious on their own, or with a smear of salted butter, cream cheese, or apple butter.
