This easy acorn squash recipe is the perfect holiday side dish! Made with tender roasted acorn squash stuffed with a buttery filling of brown sugar and walnuts.
First, you'll need to cut the squash open. Poke holes in the squash with a fork and then microwave it for 5 minutes. Then cut in half. Your squash is ready for roasting!
Season the squash with salt, pepper, drizzle with olive oil, then place it in the oven to roast.
Fill each half of the acorn squash with butter, brown sugar and chopped walnuts.
Roast the squash for an additional 7-8 minutes. Garnish with chives and serve!
