Pastina is a type of small, granular pasta. The direct translation from Italian is "little pasta"! Add it to soups and stews, or enjoy pastina as a dish on it's own. Today, we're making a family-favorite recipe for Chicken Pastina Soup!
Saute carrots, onion, celery, and garlic in a pot with oil. Add a parmesan rind if you have one.
Add thyme and season with salt and pepper, then stir in cooked, shredded chicken.
Next, pour in your favorite, good-quality chicken broth or stock. Simmer for 20 minutes, then add the pastina.
Cook the soup for another 10 minutes until the pastina is tender. Then, serve!
