Pineapple Midori Cocktail Recipe

These Pineapple Midori Cocktails are definitely not one of those fruity umbrella drinks that you sip on all day and expect to make it to dinner that night. These drinks are strong and boozy and oh so tasty.

We all need to have those drinks for sipping on the beach – you want to enjoy your tropical cocktail but still make it until at least 10:00. Those kinds of drinks will get you through the night and still give you a little fun throughout the day.

But here I wanted to show you the harder side of rum. A drink that can really pack a punch but still taste just like one of those fruity, easy sipping cocktails. But after a couple of these you might want to make an early bird reservation for dinner so you can hit the hay early.

For this Pineapple Midori Cocktail I used pineapple rum, but you can also use regular run if that’s all you have. The pineapple rum just kicks up the tropical, pineapple flavor in this drink recipe.

This cocktail has a little bit of everything. Midori for that neon green color. Of course the rum, and also a little bit of vodka just to round it out.

Top this midori cocktail off with a little splash of bubbly seltzer and you’ve got yourself a party.

How To Make These Midori Cocktails

Grab all of your ingredients together, shake them up in a shaker and pour it over ice.

You have to give this a big piece of pineapple and one of those umbrellas…just to keep with the tropical feel that these drinks have going on.

Definitely serve these Pineapple Midori Cocktails with a warning. NO driving home after one of these babies!

Ingredients

  • 1 ounce Midori
  • 1 ounce pineapple rum
  • 1/2 ounce vodka
  • 1/2 cup pineapple juice
  • Seltzer for topping
  • Garnish with pineapple wedge and cherry

Instructions

  1. Shake the rum, midori, vodka and pineapple juice in a shaker filled with ice.
  2. Strain into a glass filled with ice and top off with seltzer.
  3. Garnish with a pineapple wedge, cherry and an umbrella.
