Description

This easy Swedish Meatloaf recipe is perfect winter comfort food. It’s bursting with flavor and sure to become a family dinner favorite!


Ingredients

For the Meatloaf

  • 2 lbs. meatloaf mix
  • 2 cups of finely diced onion
  • 3 cloves of garlic, minced
  • 1 c. bread crumbs
  • 2 eggs
  • 2 t. salt
  • 1/4 t. freshly ground nutmeg
  • 1/4 t. allspice
  • 1/4 c. chicken broth
  • 78 grinds of fresh pepper
  • 1 T. worcestershire sauce
  • 1 T. sweet chili sauce
  • 1 T. olive oil

For the Glaze

  • 1/2 c. sweet chili sauce
  • 1 c. grape jelly
  • pinch of cayenne
  • 1 heaping T. of ketchup
  • salt and pepper to taste

Instructions

  1. Preheat oven to 325 degrees.
  2. In a medium skillet on medium-high heat, saute the onion in olive oil for 5 minutes. Add in the minced garlic and cook a minute more. Let cool slightly off the heat.
  3. In a large bowl combine the meat, the cooled onion and garlic mixture, bread crumbs, chicken broth, eggs and the seasonings, mixing well to combine.
  4. Make the glaze by combining all the glaze ingredients in a saucepan. Bring to a simmer and let cook for 5 minutes to thicken.
  5. Form into a loaf on a baking sheet lined with aluminum foil and coat with about a cup of the glaze.
  6. Place in the oven for 45 minutes, baste with more glaze and cook another 15-20 minutes, until no longer pink in the center.
  7. Let cool for 10 minutes then slice and serve with extra sauce on the side.
