Description

Ingredients

  • 1 tablespoon olive oil
  • 1 1/2 cups diced celery
  • 1/2 cup diced red onion
  • 1 1/2 cups frozen peas and carrots
  • 1/4 cup chicken broth
  • 2 tablespoons crushed garlic
  • 5 cups riced cauliflower
  • 2 cups diced ham
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth
  • 3/4 cup tomato sauce
  • 1 1/2 teaspoons salt
  • 1 teaspoon black pepper
  • 1/2 cup grated parmesan cheese, plus extra for topping

Instructions

  1. In a large skillet, heat the oil over medium heat.
  2. Add the celery and onion and cook, stirring, for 8-10 minutes until softened.
  3. Add the ham, peas, carrots, the chicken broth and crushed garlic. Stir to combine and cook for 5 minutes, uncovered.
  4. Next add the riced cauliflower to the skillet, stir and cover for another 5 minutes to soften the cauliflower rice.
  5. Now pour in the tomato sauce and cream, stir and season with salt and pepper.
  6. Add the parmesan cheese, stir and serve with extra parmesan cheese for topping.
