  • Add diced onion and ground beef to a skillet with olive oil and cook while crumbling the beef. Drain any drippings if needed. Add tomato paste, seasonings, brown sugar, mustard, beef broth and stir. Simmer for 5 minutes to combine the flavors.

  • Add 1/2 of a cup of beer cheese to the sloppy joes and mix to combine. Taste for seasonings and adjust if needed. Serve on hamburger buns or pretzel buns.

Variations

This beer cheese sloppy joe recipe is really pretty versatile, so you can switch things up to your liking or use what you have on hand. If you don’t have hamburger buns, you can use tortillas and make a wrap. Or you can spoon this sloppy joe filling into a fluffy baked potato with more shredded cheese on top.

We also love using this sloppy joe recipe as a nacho topping, or for scooping up with chips!

  • Instead of ground beef: You can use ground turkey or pork, or a combination of meats like in a meatloaf mix.
  • Add-ins: Try adding some vegetables like green pepper (or any color pepper) like we do in our traditional sloppy joe recipe. Give it a Tex-Mex vibe by adding some black beans and hot sauce, maybe swapping out the beer cheese for queso.
  • Instead of beef broth: Try adding a cup of beer instead to keep with the beer cheese theme. Or you can use chicken broth or vegetable broth in a pinch, too.

Storing and Reheating

Store any leftover sloppy joes in an air tight container in the refrigerator for up to four days. The beer cheese sauce will tighten up in the refrigerator, but don’t worry, they’ll heat up perfectly.

The microwave is best for heating these up, and only heat until just warmed through or the cheese sauce might break a little and become greasy. Still delicious either way!

Beer Cheese Sloppy Joes are the sandwich of your dreams! Made with seasoned beef and a rich cheese sauce, this comfort food recipe is perfect for weeknights, tailgates and game day parties.

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 1 1/2 pounds ground beef
  • 1 tablespoon tomato paste
  • 1 tablespoon brown sugar
  • 1 1/2 teaspoons kosher salt
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon paprika
  • Black pepper to taste (can also try a pinch of cayenne pepper or red pepper flakes for a bit of heat!)
  • 2 tablespoons Worcestershire sauce
  • 1 cup beef broth
  • 3/4 cup beer cheese (plus more for serving)
  • Hamburger buns for serving

Instructions

  1. Add the oil to a large skillet over medium heat. Add the diced onions and ground beef, breaking up the beef into crumbles as it cooks. When the beef is cooked through, drain any drippings from the pan.
  2. Add the tomato paste, brown sugar, salt, garlic powder, paprika, pepper, Worcestershire sauce and beef broth to the pan and stir to combine. Simmer over low heat for 5 minutes to combine the flavors.
  3. Add the beer cheese to the skillet and stir until melted and combined with the beef mixture. (You can make the beer cheese ahead of time if you like, even if it’s refrigerated it’ll melt into the beef very easily).
  4. Taste for seasonings and serve on hamburger buns.

Recipe Notes

Store: Store leftovers in an air tight container in the refrigerator for up to four days.

Reheat: Reheat leftovers in the microwave until just warmed through. If you overheat the meat, the cheese sauce can tend to break, causing it to become greasy.
