Brown Butter Roasted Artichokes

Brown Butter Roasted Artichokes are so delicious, they often turn into our dinner. These addicting artichokes are cooked with wine and parmesan cheese!

Brown Butter Makes Everything Better…

Roasting any type of vegetable brings out its natural sweetness, but then add some brown butter to the mix and you’ve got yourself a side dish worthy of some praise. These Roasted Brown Butter Artichokes are so delicious, they often become the main course at our house because we just eat so darn many of them.

What is brown butter? Brown butter is simply butter that has been cooked until it starts to turn brown. There’s a fine line here, so once the butter starts turning brown, remove it from the heat so that it doesn’t burn. What you end up with is a super flavorful, nutty butter that’s to die for.

How Do You Make Oven Roasted Artichokes?

Start off by roasting the artichoke halves in a baking dish with white wine and chicken broth. Lots of garlic cloves get added in here too, but just smashed, not cut up so the flavor will be milder.

After about 30 minutes the artichokes will come out of the oven tender and cooked through. You can totally eat them at this point just dipped in your favorite sauce or melted butter, but we’re going to take this artichoke recipe one step further.

Add butter to a large skillet to brown and then place the roasted artichokes in the skillet cut side down. Cook the artichokes in the brown butter until the edges of the cut side get crispy and brown. This will take about 5 minutes, but keep checking the artichokes to see if they are getting brown, if not just let them cook a few more minutes.

Once the artichokes have browned, remove the skillet from the heat. Drain the cooking broth from the baking dish into a bowl and then place the artichokes back into the baking dish, cut side up. Now you’re going to take the delicious cooking liquid and drizzle it back over the tops of the artichokes. Add a handful of shaved parmesan cheese, more salt and pepper and chopped parsley for garnish.

We’ve also added toasted pignoli nuts (pine nuts) to these artichokes!

We love artichokes so much, we make them all year long for any dinner! But these artichokes are also totally holiday worthy, so don’t hesitate to add them to your Thanksgiving or Christmas dinner menu!

Artichokes are often serve in Italian families with pastas and beef, and as a side to turkey or pork. So like I said, mostly anything.

These tender artichokes are a delicious side dish to any meal! You can serve this artichoke recipe as a holiday side dish too!

Ingredients

  • 4 medium sized artichokes
  • 10 garlic cloves, peeled and smashed
  • 8 tablespoons butter
  • 1 cup chicken broth
  • 1/2 cup white wine
  • Salt and pepper to taste
  • 12 tablespoons fresh lemon juice
  • 1/2 cup shredded parmesan cheese
  • Chopped parsley for garnish

Instructions

  1. Preheat the oven to 400 degrees.
  2. Trim the stems off the artichokes, then pull off the tough outer leaves. Cut the artichokes in half from the stem to the tip and scrape out the choke with a spoon.
  3. Pour the chicken broth and wine into an 11x 13 baking dish, then add the artichokes cut side down. Add the garlic cloves and 4 tablespoons of butter around the dish.
  4. Season the artichokes with with salt and pepper to taste, then cover with foil and bake for 30 minutes. Test to see if the artichokes are tender by inserting a knife or toothpick into the stem of the artichoke. Place the foil back on the baking dish to keep warm.
  5. In a large skillet, add the remaining butter and melt until and browned.
  6. Remove the artichokes from the dish, draining off any excess liquid and place into the skillet cut side down. Cook for 5 minutes over medium heat until the artichokes have browned on the edges.
  7. Remove to a serving platter, cut side up, and then carefully pour the juices from the baking dish over the artichokes.
  8. Garnish with the parmesan cheese and fresh chopped parsley.
