Two days after Thanksgiving my family and I will be sitting back on that ridiculously beautiful beach Trunk Bay, you can go back and read about my last vacation to St. John here.

We’re going with a few other couples and their kids…and it’s going to be a party for sure.

One of my friends had the idea to do a cocktail party in everyone’s condo each night and the theme is going to be Christmas at the Beach. So each family is going to make a Christmas cocktail to share at happy hour with everyone…like a big rotating cocktail party. I’m totally in.

So my idea was this Island Champagne Cocktail, with pineapple juice, cranberry juice, amaretto and champagne. And it’s a winner. Because champagne cocktails are always a winner!

Everyone gets excited when you start popping those corks and pouring out the champagne because champagne drinks usually mean some sort of celebration is going on.

Unless you live at my house and it’s just any day of the week that you need a little glass of the bubbly. Because that’s what we do on a random Tuesday sometimes…we just love the bubbly.

How Do You Make This Champagne Cocktail?

A Champagne cocktail is an actual drink recipe. Typically made with sugar, bitters, brandy and champagne. But the there’s the term “champagne cocktails” which means any cocktail that’s made with champagne. So it can get confusing, but we are here to help!

For this Island Champagne Cocktail recipe, all you need to do is mix the fruit juices together with the amaretto in a small jar or pitcher.You can do this ahead of time if you’re making these drinks for a party or brunch. Just stash the pitcher in the refrigerator until you’re ready to serve.

Now pour the juice mixture into the bottom of each of 4 glasses and then top with champagne or prosecco.

Garnish this tropical champagne cocktail with a big wedge of pineapple. If you want to get fancy, you can add a leaf from the pineapple too and maybe even some fresh cranberries.

The color of these cocktails are so pretty, it reminds me of a sunset on the beach. Even if it’s the dead of winter you’ll still find us making these champagne drinks, because we want to at least pretend like we’re feeling that sunshine!

Ingredients

  • 2 ounces pineapple juice
  • 2 ounces cranberry juice
  • 1 1/2 ounces Amaretto
  • Champagne or prosecco for topping
  • pineapple wedges for garnish

Instructions

  1. Mix the pineapple juice , cranberry juice and amaretto together.
  2. Pour 1 1/2 ounces of the mixture in each of the four champagne flutes.
  3. Top with champagne and garnish with a pineapple wedge.
