These Meatball Pizza Quesadillas are perfect for party appetizers!

Meatball Pizza Quesadillas

Cook up these Meatball Pizza Quesadillas for a busy dinner night that still needs flavor and fun!

It seems like we are always on the run, between practices, games and school activities and between our two kids – there’s not much time for anything else except sleeping.

But food. There has to be time for food. Dinner can be crazy, these days we make something and keep it in the fridge so that whoever needs to eat can eat when they need to. Sit down dinners for us are happening less and less but that doesn’t mean we don’t want a tasty dinner…

These Cooked Perfect Fresh Meatballs come in four different flavors, Italian Style Beef & Pork, Sundried Tomato and Roasted Garlic Chicken, Korean BBQ Beef and Italian Style with Parmesan & Mozzarella Chicken.

Hard to choose from but for the recipe idea I had in mind I grabbed the Sundried Tomato and Roasted Garlic Chicken variety – they were going to go perfectly in these Meatball Pizza Quesadillas. All I needed was a few more ingredients to get dinner going…

These quesadillas are not only crazy easy to make, but they are a huge hit with my boys. Pizza in any form is usually a hit, but these quesadillas make plain old pizza look, well, just plain.

The only trick to these quesadillas is the flipping part – but don’t worry about that, I’ve got a cool trick to help you do that easily.

All you have to do to get started is microwave the Cooked Perfect Fresh Meatballs to get them ready. Yep, cook the meatballs right in the microwave. In just a few minutes you’ve got tasty, full flavored meatballs right at the ready. These meatballs also come with an easy steam pouch for microwaving…just pull off the cardboard and cook them in the pouch…out come perfectly cooked meatballs!

Place a large, burrito sized tortilla in a large skillet. Layer on some shredded mozzarella cheese then a layer of meatballs that have been cut in half. Then on top of the meatballs goes some marinara sauce, your own or your favorite store bought brand, and a few pieces of fresh basil.

Then another layer of mozzarella cheese…

Place another tortilla on top and press down with a dinner plate that’s face down. These are going to cook for about 3-4 minutes on each side until they’re browned and crispy…and I know what you’re thinking now…how in the world am I going to flip this monster sized quesadilla?

Place your hand on the dinner plate, grab the handle of your skillet and flip the whole thing over while you’re holding on firmly to the plate then remove the skillet back to the stove and slide the quesadilla back in.

Now it’ll cook for another 3-4 minutes on the second side until crispy, then you can just slide it out onto a cutting board. Cool for just a minute or two and then cut into wedges. I like to cut into 8 pieces, just like a pizza so everyone gets a couple of pieces.

This Meatball Pizza Quesadilla is enough for a family of four, especially if you serve a salad on the side. But these come together so quickly, while you’re at it you might want to make another…leftovers are awesome.

One bite of these quesadillas and you can tell that these meatballs are made from select meats and cheeses and seasoned perfectly. That’s why there’s no need for a ton of other ingredients here, just the meatballs, tortillas, cheese, sauce and fresh basil. A five ingredient, ridiculously delicious dinner.

Meatball Pizza Quesadillas

  • 2 large (burrito sized) tortillas
  • 3 cups mozzarella cheese
  • 1 (12 oz.) package Cooked Perfect Sundried Tomato & Roasted Garlic Chicken Meatballs
  • ¼ cup fresh basil, chopped
  • ½ cup marinara sauce
  • 2 tablespoons grated parmesan cheese
Instructions
  1. Heat the meatballs in the microwave according to the package directions. Cut each meatball in half and set aside.
  2. Spray a large skillet with cooking spray and turn on over medium heat.
  3. Place one tortilla in the skillet and top with half of the cheese.
  4. Lay the meatballs cut side down on top of the cheese, covering the entire surface.
  5. Spoon the sauce over the meatballs then top with the chopped basil and parmesan cheese.
  6. Add the other half of the cheese to cover the meatballs, then top with the other tortilla.
  7. Press down with a dinner plate, top side down and let cook for another minute, checking to see if it's browned on the bottom.
  8. When the quesadilla has browned, place your hand firmly on the dinner plate and flip the skillet over with your other hand, then slide the uncooked side of the tortilla back into the pan.
  9. Press down with the plate again and cook for 3-4 minutes until the other side is crispy.
  10. Slide the quesadilla out onto a cutting board and let cool for 2 minutes.
  11. Cut into wedges and serve with extra chopped basil on top.
  12. Notes If you want to make these quesadillas smaller, just use Heat the meatballs in the microwave according to the package directions. Cut each meatball in half and set aside.

Notes If you want to make these quesadillas smaller, just use a smaller tortilla and divide the ingredients between them.
